干絲拌青豆仁----冷拌小菜

干絲一包,青豆仁一杯,一小根黄籮葡絲.燒一清鍋水,水開後,先將上黄蘿葡絲放入水中浸两浸就拿出冲冷預用,再煮青豆仁開鍋後煮五分鈡,重在脫生.撈出冲冷水,保持翠綠.亦可用同鍋水去煮干絲但要加小匙苏打粉 (baking soda)用大火煮開,熄火後,再等一分鐘後,撈起過冷水,冲凉後,瀝乾.把這三味調在一起.只用塩及魚露和麻油.


請稍留意,此道凉拌菜,重在顏色,不能用醬油.麻油不可省.如愛辣者可放些辣油無妨.第三味可用其有顏色蔬菜取代的,比如加半個甜紅椒小丁拌在干絲中又好看又好吃.絕對定一道美味的前菜或是夏日下粥小菜的首選.放心是健康養身两相宜.
